I am always hesitant to use a really sharp knife.  I watch so many of the cooking shows where professional chefs cut themselves and they cut food for a living.  How in the world am I supposed to use a knife that is twice as sharp as steel knives?  I used one of these knives when I was cutting cookie dough.  It sliced right through the dough like it was butter.  It was very easy to clean and when I was done I put the sleeve back on the knife to protect the knife and myself.
